Preservative and Flavor Enhancing Properties of Dry Mushroom Powder by Dr. Lilian Were!Because lipid and protein oxidation are major causes of chemical quality deterioration in foods, and the desire of consumers to avoid synthetic additives, there continues to be much effort put into developing foods with natural antioxidant ingredients that are acceptable to consumers. Mushrooms contain both antioxidants and flavor enhancing umami compounds. Therefore, they investigated the antioxidant effectiveness of dehydrated mushrooms in refrigerated beef patties.  The species selected was white button mushrooms. This talk will address work conducted to determine the antioxidant effect of dried white button mushroom in ground beef and sensory evaluation trials conducted to determine their salt reduction effect.
Lilian Were holds a PhD from Purdue University.  Her Faculty Forum talk will address mushrooms as a preservative that provides salty flavor without the risks that salt brings.

Faculty Research and Development Council Faculty Forum Lecture - Monday, April 24th from 11:30 am - 1:00 pm
Location: AF 209BTopic: Cellular, Behavioral, and Ecological Examinations of Suppression of Learning by Dr. William G. Wright

Decades of research has produced a large body of literature on how cellular changes during learning result in memory. Work in the well-researched model species in Aplysia californica has illuminated the cellular and subcellular mechanisms that produce sensitization, simple form of learning that involves an increase in defensive withdrawal for hours to days after a noxious stimulus.  Missing from this literature, and, indeed very rare in the overall literature on learning, is research on mechanisms that suppress memory in living nervous systems. Dr. Wright along with Alex Himstead, Jessica Martinez, Catherine Domingo, Vanessa Mendoza, are testing a specific hypothesis for how Aplysia and other species may suppress learning when it is maladaptive.  They are exploring this hypothesis at cellular, behavioral, and ecological levels.  Dr. Wright will report on their most recent experiments.William G. Wright has been collaborating with undergraduates as a professor of biology at Chapman University since 2001 and Colorado State University from 1990-2000.  He received his BS from UC Santa Cruz in the 70s and his PhD from UC San Diego’s Scripps Institution of Oceanography in the mid-80s.  He did postdoctoral fellowships at the University of Washington’s Friday Harbor Labs, and Yale University’s Department of Psychology during the late 80s.
